Really depends on a lot of factors. How many users you have. How popular your site is. Who pays the fees. By what means you are collecting these fees. etc etc. You might answer those first.

I don't think there's perfect solution for your issue. Even on freelancer .com, we can still get the contact information of each other them pay offline, go around your payment system. I think the solution may work is that, escrow. So buyer need to create escrow payment, and after they received the product, release the payment. At the meantime, you get 7.5% of the amount. And, try to prevent the users to leave contact information. Hide contact information of the auction before escrow has been created. And, only orders payed by escrow can have reviews.
