Track clicks from Acrobat document in Google Analytics via PHP

We currently publish a number of PDF documents each day which are distributed to subscribers by email. We use a basic PHP script to track (in Google Analytics) when someone clicks on one of the links within each document. A security vulnerability in our existing technique means it needs to be enhanced and updated; we need someone with expertise in server side google analytics to do this. If possible it would also be great to find a way to measure the number of 'opens' of our PDFs which are stored on an Amazon S3 server.
