there are 2 ways. 1.) introduce smoke through boundary condition. 2.) simulate the combustion process inside the control volume. now here is the approach, use euler multi volume of fluid, use species transport (if combustion is involved). now based on your geometry, fix a co-ordinate where the smoke detection is required. give the suitable boundary condition and place a probe in that co-ordinate which will give you the mass fracations of pollutant at any given time.
