Customize Magento Backend

When adding any product under the custom options tab we need the ability to add columns and have them appear nice and straight in the front end. For each item in this store there will be many sizes to choose from. In the custom area there will be ability to add a header for the column and then add the many sizes for each product. It may make more sense to just look at what we have here next to the check boxes. We need a much more efficient way of adding this in the back end and have it appear nice and straight in the front end. Right now we are using many dots to separate the data and time consuming to have it look straight afterwords. Then this long product name transfers to the cart and looks funny throughout the checkout process. Ability to change row background color would be nice too . Each product initially is $0 and required to pick a size from the check boxes is how it is set up now.
