Restore the users data of our website

BACKGROUND OF THIS PROJECT
About two weeks ago, my website and admin panel to the website suddenly stopped loading pages and styles completely and even showed blank pages at a time. You can see the error log of the site in the attached file.
To avoid having our website showing blank pages, the backup of the website that was backed up about a month earlier was restored. So, the website that was restored does not contain the updated website content of our website as well as our users data. I want someone to help me restore the users data that was on the updated site back to my website.
