I've set up quite a few servers like this before, should be a pretty easy task. The two small servers we can look at which web server will be best (apache, nginx, etc). Looking at the modules you want enabled those are common for apache so that might be the best choice to get started. For the database server there's no need to install phpmyadmin, everything can be done via the command line. Also, keeping it on a private IP only will add to the securiity. Given the items below I could have this configured and ready in a few days.
