Magento Stacked Dedicated Server Setup and Configuration (Enterprise setup) with Site Moves

We are looking into getting 2 separate server stacked together in an enterprise configuration where one powerful server will be used for database queries and one for static web files. We are currently getting quotes for the servers themselves. These servers will need this server fully optimized to host 5 active Magento 2 websites along with a couple of dormant sites for testing/future Magento 2 webstores. I believe our host will install some sort of version of Linux (Centos I assume) on both servers but after that we would need someone to link both servers together. We will need them configured so they work in tandem with each other. After that the installation and optimization for the servers would be needed to get all our Magento 2 sites up and running optimally. That would include installing and optimizing nginx, centos, redis, php7, varnish, MariaDB, Percona, firewall settings, etc. We are making assumptions on the types of software needed so an expert system administrator with Magento 2 experience would be welcomed. We need to make sure the software set up works with our sites without issue. After the server is fully configured, we would need our sites to be moved over. It would NOT be a cpanel to cpanel move though however. A total of 7 sites with 5 of them being active would need to be moved over and we do NOT currently have root access with our current host.
