This is a three phase challenge, theoretical, proof-of-concept, and implementation. I want someone living in Turkey, or preferable living in New York, who would be needed for further projects. Simit (Turkish bagel) is consumed throughout Mideastern and Balkan countries, and it is especially popular in Turkey. It is estimated that tens of thousand of simits are consumed every day just in Ankara, the Turkish capital. One important ingredient of simit is sesame seeds, which are sprinkled onto the surface of shaped-dough that is read to bake. The aim of the project is to reduce the amount of sesame seed usage in simit baking without visible doing so. We don't want to introduce much visible change, which can drive away customers. You can use any skills you have, i.e. math skills to model the geometry (preferred), 3D design, graphic design, or even better if you are a baker, you can try your way to bake a tasty simit using minimum amount of sesame seed. For modelers and math geniuses out there, here are the typical simit & sesame seed geometric parameters: A) A simit shape is approximately a flattened toroid, with outer diameter 12 -16 cm, thickness 2.5 - 3.5 cm, height 1.5 - 2.7 cm. B)the sesame seed coverage is 20 - 26 / square centimeters on simit surface, after baked. C) A typical sesame seed's shape is approximately flattened ovoid, with length 2.0 -3.7 mm, width 1.1 – 1.5 mm, and thickness 0.4 – 0.6 mm. One such seed weights about 20-80 mg. D) The nominal price of fresh sesame seed is 5.25 USD/ Kg. The object is twofold. 1) minimize the amount of sesame seed usage (in US dollars) on simit surface, and 2) minimize the amount of visible change after doing step 1. Here, you need to consider only two common simit shapes that is shown in the attached picture.

Hi I am Merve from the simit's country Turkey and who want to live in New York. I have eaten the simit so many times and also so many times I have cooked. First of all you have to decide which type of simit what want to reduce sesame seed amount in baked? Because there are different varieties. İf you work with me I can explain all of key points. Here is your answers; 1) I can eat 4/5 simit in a day 2)Dried sesame seeds so many protein, mineral and vitamins but most abundant is B vitamin.

I used to eat 2-3 simits every single morning throughout 14 years before starting work. I don’t believe that a mathematical model will work, but I can share my advice from a consumer‘s perspective. Relevant Skills and Experience I’m a fan of simit and quite conservative about its taste and quality. My home is at the intersection point of 4 bakery shops, and I choose only one for simit.

I have lived in Ankara since 2000 and I consume simit nearly every day while on my way to work. So, this project captured my attention. For the questions: I eat 1 simit a day. A, E and C vitamins are the mostly found ones in simit.

Answers: 1) Usually 1 simit a day 2)Vitamin B is most abundant in sesame seeds For more information I want to share the solutions that I have thought out of my head. First of all since we want to use less seeds, we need to design something in order to replace seed appereance. We could desing and implement like a 3d printed bumpy mold (Which bumps are made out of ovoids) where, dough can be rolled over, topped with less seeds and get seed like appereance. Also tight wound dough can create much complex shape which might help to preserve appereance. I hope that I've explained my thoughts clearly P.S: I live in Istanbul
