Dear sir/madam, I have done many microcontroller projects before and I think it is feasible. Please be carefull with the TCS3200 it is marked "NRND: Not recommended for new designs." The only thing that makes me worried is the performance of the sensor. There are many factors that could alter its output (mostly the (ambient) lighting, the reflexivity of the tomato , dirt on the conveyor/tomato). Have you done some proof of concept testing with TCS3200? What happens if the tomato is not exactly above the sensor? What will you do with the ESP8266? Please feel free to contact me and talk about the details?
