Good morning. I hope you are well. I can help you with this. I have plenty of graphics experience, and I also do printing, if you would like a second quote. Re the printer's requirements, a 5mm bleed means your design needs to extend 5mm in each direction, past the document size, e.g. A4. Without a proper bleed you end up with white space around the design which is not what you want. Most printers require a minimum of 3mm. The outlines they refer to is basically turn the shapes and text into embedded shapes, e.g text is no longer text. Without this the printer can't view the fonts and images as they are basically sitting on your computer. I would be more than happy to help you sort this out ASAP.
