Compose a Data Acquisition System with various sensors

I have a lot of experience with data acquisition systems ranging form industrial controls and the related applications, as well as, micro controllers and electronic hardware board design. Once I learn more about the specifics of the project I could inform you of what the better technology would be to use. The first step would be do get more into the details or what you mean by portable and generate a basic Input and Output requirements along with power and packaging requirements. Portable products can be tricky when it comes to how you will power them and what kind of packaging you will use. Will you need a rugged case for heavy duty use? Finally we should look at what you will be doing with the data? Will you be storing it locally or want to move it to an external device such as a PC or server/Cloud application.
