Chitin and Chitosan Extraction Process

Hi, I am looking for an excellent and knowledgeable chemist to work on a project for our company. I need them to develop or create from previous literature a method of extracting chitin using lactic acid fermentation and then chemical extraction of chitin from the shells of insects, and then how to turn the chitin into chitosan. The process with which to adjust the amount of fermentation and chemicals required based on the constitution of the insect matter.
