create linux AMI capable of running java GUI application and remotely accessible via VNC

I would like to run a graphical java application on an AWS instance and access it remotely using VNC. Rather than create an AMI for me I would like someone to generate step by step (assume a medium level of familiarity with both AWS and Linux) set of instructions for creating an AMI that does:
1. Launches the following application in an x-windows at launch time environment: [login to view URL]
2. Has a user account called ibgateway
3. Binds the home directory of ibgateway user to an EBS block
4. launches an instance of VNC server that would allow someone using a VNC client to remotely access the GUI application (access should be password protected). The VNC server run in a security mode that is compatible with the OSX Chicken of the VNC client.
Additionally I would like to
Start/stop the AMI from a bash script (starting should include binding the EBS block) and would expect someone to provide the script. The script should work on OSX.
Again, I need step by step instructions for creating the above rather than the AMI itself. Note that:
1. I already have an AWS account
2. I have created AMI's on my own in the past
3. I have experience installing and building linux apps (e.g. using YUM and download+./configure+make install, etc)
So you can assume a fairly high level of skill on the part of the end user of the README. I am capable of figuring out the steps myself but have limited time to work on it so I would prefer that someone prepare a guide for me.
